Emergency chocolate pudding

I’m not a fan of snacking but sometimes things happen - you are running late, missed a meal, have a deadline to hit or your kid is having a meltdown and you need something - fast. This takes two minutes, is high in protein and keeps hunger pangs at bay. It’s worth having some of these as store cupboard ingredients. I use peanut butter powder as it is a versatile ingredient to have in your store cupboard. You don’t need a blender, a knife or need peel anything. Just bring a spoon and a small bowl.

Serves 1

Ingredients

  • 1 cup kefir - dairy or coconut. Full fat yogurt will do as an alternative.

  • 2 tbspn peanut butter powder or nut butter

  • 1 tbspn cacao powder

  • 1 tspn collagen (ideally grass fed)

  • A few drops of stevia or maple syrup/honey to taste

Method

I’m not sure stirring all of the ingredients into the kefir actually qualifies as a ‘method’, but that is all you need to do. Top with cacao nibs or seeds. The photo here is topped with baked salted and soaked buckwheat, for that chocolate, salty, peanut butter hit.

Notes

  • More carbs - add half a banana

  • More fats - add 1/4 avocado

  • More fibre and plant based omega 3’s? - add 1 tbpsn flax seeds or chia seeds

Food Facts

  • Collagen - amino acids (glycine, proline, and hydroxyproline) for glowing skin, healthy joints and strong bones.

  • Chocolate - high in iron and magnesium. Also a powerful source of anti-oxidants and good fats.

  • Kefir - good bacteria which colonises your gut and improves your microbiome. Protein rich.

  • Nut Butter - great source of protein.
