Gut loving smoothie bowl

Breakfast preparation needs to be quick during the week and this healthy gut friendly smoothie bowl ticks all of the boxes. Experiment with different fruits and seeds. You can even turn this into a chocolate pudding. I prefer a thick smoothie as you can ‘chew’ the food, which gets the digestive juices flowing, rather than just bolting down something liquid. Kefir feeds your good gut bugs and the collagen helps to strengthen and repair the lining of your gut as well as providing a good source of additional protein. Avocado is a healthy fat and will keep you full for longer. Vegans can replace kefir with coconut kefir and collagen with extra seeds such as pumpkin, sunflower or chia, or even some inulin powder.

  • 1 cup frozen fruit.

  • 1/4 to 1/2 avocado (freeze the rest for future smoothies)

  • 1 cup kefir

  • 1 tbspn flax or chia

  • 1 tbspn grass fed collagen peptides (I use Ancient & Brave)

  • Toppings of choice

Add all ingredients to a blender and blend until smooth. Scoop into a bowl and add toppings of your choice. This photograph is topped with my anti-inflammatory gluten free granola.

Variations:

  • Chocolate - Replace fruit with 1 tbspn of cacao powder with a tspn of raw honey or maple syrup. Raw honey is prebiotic.

  • Pineapple or mango, with ginger and mint

  • Mixed frozen berries

  • For a higher energy breakfast, add 1/4 cup of rolled oats and leave to soak for an hour or so. Go for a workout and it will be ready to eat afterwards
