High Protein Coffee & Chocolate Pudding

This is a Tom Kerridge recipe from his 2017 Dopamine Diet Cookbook. I’m still playing with the quantities and you should too. Feel free to experiment as it’s hard to mess this up. I calculated the protein content per portion on Cronometer and it worked out to 15g of protein if greek yogurt is used.

Serves 4

You need:

1 x 450g tub FAGE yogurt. Greek yogurt has the highest protein content of all yogurts, but any natural yogurt will work fine.

70g chia seeds

1 tbspn orange extract (I didn’t have any so added 4tbspn triple sec instead)

2 espresso shots

2 tbspn cacao powder

1 tbspn erythritol or xylitol

Couple of squares of dark chocolate - I used 90%

Method

Put the chia seeds into a bowl and add the espresso, orange extract, xylitol and cacao powder. Combine. Add in the yogurt, lightly whisking everything to together.

Divide into 4 serving glasses and cover with cling film. Leave for 12-24 hours.

When you are ready to serve remove the cling film and grate over the chocolate. You could also add cacao nibs or crushed espresso beans.

Pimp it: This would probably work well with peanut butter instead of coffee or chopped frozen cherries instead of coffee. You might need to add a bit of water in place of the espresso shots so it doesn’t go too thick.
